One flame or four
One jet flame is a point and works most precisely on a small ramekin. Four flames form a wider cone, with which you get through a large dish or several ramekins in a row more quickly.
Can you turn the flame down
Models with an adjustable flame or an adjustable air intake let you take the heat back. That helps with thinly scattered sugar, which otherwise goes black before it has properly melted.
Safe in the kitchen drawer
Some torches have a child safety, others a lock button so the flame keeps burning without you pressing it. The first is better in a drawer, the second when you work for longer stretches.
